This dressing is inspired by Tartare Sauce, but is built on low fat yoghurt rather than mayonaise. It can be used for as a tangy substitue for Tartare Sause, or as a dip on crackers for example.

Chop the cucumber and capers finely and fold into the yoghurt. Sprinkle the Xanthum powder over it and stir in.
Store in the fridge, for up to a few days.
