Plain Scones

Ingredients

Note: 'yield' and '70g scones' are cooked quantities and allows for evaporation in cooking. 500g of flour makes a dozen 70g (cooked) scones.

Method

  1. Combine flour and baking powder.
  2. Rub butter in well.
  3. Add water and mix to a soft dough.
  4. Turn out onto a floured board and knead lightly.
  5. Roll out 20mm thick and cut into portions.
  6. Place on a greased tray and brush the tops with milk.
  7. Bake until brown on top, about 12-14 minutes in a hot (200°C) oven.

It is important to not over knead the dough as it will make it tough and prevent the scones rising.
