Blackcurrent sauce

A sweet sauce for deserts, eg drizzled lightly over apple pie and cream. It has a striking dark red colour, quite strong taste and is very sweet, so only a little is required.

Blackcurrent syrup sold as cordial is typically 50% sugar (or 50°Bx), and is inexpensive. Boil syrup in a pan until reduced to about 75°Bx, about 2/3 of the volume, then cool.

The sauce keeps well in the refrigerator, but may need warming just a little in the microwave to make it runny enough to serve.
