Method

Cook 500g of dried chic peas for 45min in a pressure cooker and allow to cool naturally. This will yield 1200g of cooked chic peas.

Alternatively one could start with tinned cooked chic peas.

Take a portion of chic peas to suit the food processor and add the other ingredients. Reserve a little of the chic pea liquour to adjust the consistency.

Process until of desired consistency, and taste.

Decant into plastic containers for use or freezing.
