Pasta - Basic

Ingredients

Method

  1. Lightly whisk the egg and water.
  2. Fold in flour and knead to a smooth ball. Use sufficient flour for a stiff dough.
  3. Allow to rest in refrigerator for an hour.
  4. Slice portions and roll out to about 1.5mm thick in pasta machine.
  5. Hang sheets on a stick and allow to dry.
  6. Cut into shape (eg futtucine).
  7. Cook in boiling water until al dente, about three minutes.
