Clean basil leaves and place in food processor with nuts, garlic, parmesan, lemon juice and half the olive oil. Start processing and add olive oil for the desired consistency.
Decant into plastic containers for use or freezing.
Though the classic Basil Pesto uses Pine Nuts, blanched almonds and many other nuts work very well. Almonds are about half the price of pine nuts in Australia. The pic above is of pesto using toasted blanched almonds for a deeper taste.
