Balsamic sweet and sour dipping sauce / glaze

A sweet and sour sauce for bread dipping, or a glaze for meat, a tangy garnish for strawberries and ice cream.

Pour a little into a shallow dish, and a little extra virgin olive oil into another. Cut some sourdough bread or Italian breads into pieces and dip in the combination.

Method

  1. Mix 100g of balsamic vinegar and 50g sugar in a saucepan and bring to the boil.
  2. Boil syrup in until reduced to about 65°Bx, about 72% of the mass, then cool.
